Beat the heat with this refreshing lentil salad! With its crisp vegetables and tangy kick from the white balsamic and white wine vinegar, it’s the perfect meal for a hot summer day. 

Servings: 4-6 

INGREDIENTS

  • 2 tbsp olive oil 
  • 2 tbsp fresh lemon juice 
  • 2 tbsp white balsamic
  • 2 tbsp white wine vinegar 
  • 2 cans of lentils, rinsed and drained 
  • 2 mini cucumbers, sliced
  • 2 carrots, diced
  • 1 orange pepper, diced 
  • 1 cup of cherry tomatoes, sliced 
  • 1 cup red onion, diced
  • 1 celery stalk, sliced
  • 1 cup parsley, chopped
  • 1 tsp italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt 

DIRECTIONS

  • Add all the ingredients to a large bowl, making sure to mix everything together properly. It’s really that easy. Feel free to enjoy the salad now or let it marinate in the fridge for an extra 20 minutes to enhance the flavor.
