Try our Sausage, Peppers, Polenta Oh My for a delicious and easy meal. Italian vegan sausages, crispy polenta, peppers and onions come together for a full-flavored dish that’s sure to have everyone coming back for seconds. 

Servings: 4 

INGREDIENTS 

  • 1 pack Impossible Italian Sausages or your favorite vegan sausage 
  • 1 red bell pepper, sliced into strips 
  • 1 orange bell pepper, sliced into strips
  • 2 onions, sliced into strips
  • 1 cup polenta 
  • 2 tbsp olive oil 
  • 28 oz crushed peeled tomatoes 
  • 1 tsp Italian seasoning
  • 2 tbsp vegan parmesan cheese

PRE-PREP

  • Polenta will need to firm in the fridge for 2 hours or overnight for best results.

DIRECTIONS 

  • To prepare the polenta, cook it in advance according to the package directions. Once done, pour the polenta in a medium size bowl lined with plastic wrap or parchment paper to prevent sticking. Allow it to chill in the fridge for at least 2 hours or overnight for best results. Once polenta is chilled, slice into 2-inch diagonal slices. Set aside. 
  • Heat 1 tablespoon of olive oil in a pan over medium low heat. Add the peppers and onions and sauté until tender. 
  • Prepare the vegan sausages, according to the directions on the package. 
  • In a saucepan, add the crushed peeled tomatoes and Italian seasoning. Simmer on low heat for 10 minutes. 
  • Add the sliced polenta to a nonstick pan with 1 tablespoon of olive oil over medium low heat. Flip the slices until they’re crispy and golden on both sides. 
  • When ready to serve, layer the sauce, polenta and sausages. Top with sautéed peppers and onions and sprinkle with vegan parmesan cheese.
