This easy to prepare breakfast features vegan sheet pan eggs packed with veggies and the savory crunch of Lightlife bacon. Topped with perfectly melted vegan cheddar cheese, these biscuits are sure to become a family favorite.

Sheet Pan Egg Biscuit

INGREDIENTS

  • 1 container of Just Egg
  • 1 pack of Lightlife Certified Vegan Smart Bacon
  • 1 package of 8 vegan biscuits
  • 1 pack of vegan cheddar cheese slices
  • 1 tbsp mushrooms, diced
  • 1 tbsp red pepper, diced
  • 1 tbsp onions, diced 
  • Pinch of garlic powder
  • Pinch of onion powder
  • Pinch of black pepper
  • Pinch of salt
  • 1/2 tsp vegan butter

DIRECTIONS

  • Preheat your oven to 350F. Grease a non-stick 15 x 10 sheet pan with vegan butter, then lay a sheet of parchment paper on top, ensuring it reaches all four corners and is flattened out. 
  • Pour the container of Just Egg onto the sheet pan, spreading it evenly. 
  • Sprinkle veggies and spices onto the Just Egg mixture. 
  • Bake in the preheated oven for 20 minutes or until the vegan eggs are set and slightly golden around the edges.
  • While the sheet pan vegan eggs are baking, prepare the vegan biscuits and Lightlife bacon according to the instructions on the packages.
  • Once baked, remove the sheet pan vegan eggs from the oven and let cool slightly before cutting them into biscuit-sized squares.
  • Assemble the biscuits by placing a square of sheet pan vegan egg and pieces of Lightlife bacon inside each biscuit. Top with a slice of vegan cheddar cheese. Serve warm.
