Indulge guilt free in our Tofu-rific chocolate pudding parfait! This delightful treat combines organic silken tofu, rich cocoa, chia seeds, vegan semi-dark chocolate chips, a hint of maple syrup and a dash of espresso powder for an extra layer of decadence between a smooth coconut cream. It’s chocolatey goodness, but with a healthier twist!

INGREDIENTS
- 2 16oz Simple Truth Organic Silken Tofu
- 4 tbsp chia seeds
- 4 tbsp organic cocoa
- 1/2 cup maple syrup
- 1 tbsp vanilla extract
- 1 tsp espresso powder
- 1 tsp refined coconut oil
- 1 cup vegan semi-dark chocolate chips
- 1 13.5oz Nature’s Charm Coconut Whipping Cream, refrigerated overnight
DIRECTIONS
- In a microwave safe container, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between, until the chocolate is completely melted.
- In a food processor, blend silken tofu, chia seeds, cocoa, maple syrup, vanilla and espresso powder until smooth. Pour in the melted chocolate and continue blending ensuring the mixture reaches a silky pudding consistency.
- Assemble the parfait by layering the Tofu-rific Chocolate Pudding and coconut whipping cream. Sprinkle with a dash of coffee grounds, adding an extra burst of flavor.
