Who doesn’t love French toast? It’s the perfect combination of crispy edges and a soft, custardy center, making it a breakfast favorite. This vegan version is an absolute treat, using Just Egg and real maple syrup for a delicious and satisfying dish that everyone can enjoy.

Servings: 12 – 14 slices

Vegan French Toast

INGREDIENTS

  • 1 loaf of sliced sourdough or your favorite vegan bread, sliced 1-inch thick
  • 1 container Just Egg
  • 1 cup soy milk
  • 1/2 cup vegan heavy whipping cream
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp real maple syrup
  • 4 tbsp vegan butter
  • Pinch of salt
  • 1 tbsp powdered sugar

DIRECTIONS

  • In a large, flat container, combine Just Egg, soy milk, vegan heavy cream, vanilla extract, cinnamon, nutmeg, maple syrup, and a pinch of salt. Whisk everything together until well blended.
  • Take your slices of bread and dip them into the batter, ensuring they are fully coated. Flip the bread over to cover both sides thoroughly and let it soak in the batter for 30 seconds to a minute.
  • In a frying pan over medium-low heat, add a little vegan butter. Once the butter has melted, place a couple of pieces of battered toast in the pan. Cook each piece for 1 to 2 minutes on each side, flipping it over and continuing to cook until it reaches a golden color. Repeat this process until all the batter and bread are used up. Remember to always butter the pan in between cooking the French toast slices.
  • When serving, sprinkle powdered sugar over the French toast, add a slice of vegan butter and drizzle with maple syrup. Dig In!
