The delightful combination of aromatic ginger and crispy fried tofu with fresh vegetables served over a bowl of rice makes this stir fry absolutely delicious.   

Servings: 4

INGREDIENTS

  • 1 9 oz pack fried tofu, sliced into smaller pieces
  • 1/4 cup raw ginger, chopped
  • 2 scallions, sliced
  • 4 garlic cloves, sliced
  • 4 button mushrooms, sliced
  • 1 sweet white onion, sliced
  • 2 carrots, thinly sliced
  • 1 red bell pepper, sliced
  • 1 tbsp olive oil
  • 2 cups cooked rice 

SAUCE

  • 2 tbsp vegan mushroom oyster sauce
  • 4 tbsp water
  • 1 tbsp soy sauce 
  • 1 tsp black vinegar 
  • 1/2 tsp lime juice
  • 1 tsp chili paste
  • 2 tsp brown sugar
  • 1 tsp ginger powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp white pepper
  • 1/2 tsp black pepper 

DIRECTIONS

  • Place all the ingredients for the sauce in a bowl and whisk everything together. Set to the side.
  • Heat oil in a large pan on medium high heat. Add ginger, garlic and onions, saute for five minutes until fragrant. Then add fried tofu and remaining vegetables and cook until tender. Pour in the sauce and continue cooking for a few more minutes, allowing the flavors to blend together. Serve over steamed rice or noodles.
