Get ready for a taste of summer with our simple yet delicious, golden sheet cake. Layered with fresh strawberries and blueberries and fluffy vegan whipped cream. It’s the perfect dessert to bring to a cookout, guaranteed to satisfy everyone’s sweet tooth. As a bonus, it’s simple to make and looks so pretty.

  • 1 1/2 cup flour
  • 1 cup brown sugar, not packed
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp white vinegar
  • 5 tbsp vegetable oil
  • 2 tsp vanilla extract
  • 1 cup water 
  • 1 tsp vegan butter 
  • 2 cups strawberries, sliced
  • 1 cup blueberries
  • 1 pack Truwhip Certified Vegan Whipped Topping
  • 4 tbsp Nature’s Charm Sweetened Condensed Coconut Milk


  • Preheat the oven to 350F and generously grease a 15 x 10 sheet pan with vegan butter. Then line the pan with parchment paper for easy removal and cleanup.
  • In a large bowl, combine the flour, brown sugar, baking soda and salt. Mix well then add the white vinegar, vegetable oil, vanilla extract, and water. Whisk everything together until all the ingredients are combined. 
  • Pour the batter onto the sheet pan. Using a spatula, spread the batter to all four corners, ensuring it spreads out evenly. You can gently tap the sheet pan on a flat surface a couple times to help even it out. Bake for 20 minutes. Remove from the oven and let the cake cool down on a baking rack for 10-15 minutes.
  • Once the cake is cooled, place another piece of parchment paper on top of the cake then carefully flip the pan over to remove the cake from the sheet pan. This ensures the cake comes out, cleanly and easily without sticking to the pan. Remove the old parchment paper. 
  • Slice the cake in half vertically, then cut each half again horizontally. This will leave you with four squares of cake. Trim 1/2 inch off the outer edge of the cake. The crispy pieces make a good snack while preparing the cake.
  • Add 1 tablespoon of Nature’s Charm Sweetened Condensed Coconut Milk to each square of cake, spread it evenly over the surface of each square. 
  • It’s time to assemble the cake. Start by placing one square of cake on a large platter. Then add two scoops of Truwhip Certified Vegan whipped cream spread evenly on top, followed by a layer of strawberries and blueberries. Place another square of cake on top and repeat this process until you’ve used up all the ingredients, alternating layers of cake, whipped cream and berries.
