Sometimes you don’t want to go out to Chipotle, but you still need that burrito fix. This is the perfect compromise!
- 1 cup of rice
- 1 can of black beans
- 1 can of vegetarian refried beans (optional)
- 1 can of corn
- 1/2 of a tomato
- 1/2 of a red onion
- 1/3 of a head of lettuce
- 2 scoops of salsa or as much as desired
Cook rice per directions on bag. Meanwhile start prepping your vegetables. Dice the tomato and onion. Then chop the head of lettuce.
Heat up the black beans and/or refried beans on the stove or in the microwave. Dealer’s choice. Drain the rice and then add it to the bowl. Begin adding all other ingredients to your bowl.
Top your burrito bowl with plant-based cheese shreds (Daiya is one of our favorite brands!), salsa and homemade guacamole. Enjoy!
