Our savory Tahini Dressing is absolutely delicious whether you generously drizzle it over perfectly roasted vegetables, toss it into a salad, or serve it as a dip. This rich and creamy blend of sesame goodness is easy to make and adds that extra zest to your meal.

INGREDIENTS

Tahini Dressing 
  • 1 cup vegan mayonnaise
  • 2 cloves garlic, minced 
  • 4 tbsp fresh squeezed lemon juice
  • 1 tbsp fresh dill weed, chopped
  • 1 tbsp fresh parsley leaves, sliced
  • 2 tbsp tahini sauce
  • 1 tbsp Bari Certified Vegan Butter Infused Olive Oil
  • Pinch of salt
  • Pinch of black pepper
Roasted Vegetables and Crostini 
  • 24 oz baby medley potatoes, chopped in half
  • 16 oz mini seedless sweet peppers
  • 12 oz rainbow baby carrots
  • 4 cloves garlic
  • 1 sweet potato, cubed
  • 1 red onion, sliced
  • 1 cup cherry tomatoes 
  • 2 zucchinis, sliced 
  • 1 tbsp rosemary leaves, chopped
  • 1 tbsp sage leaves, chopped
  • Pinch of salt
  • Pinch of black pepper
  • 1 loaf vegan bread, sliced
  • 4 tbsp Bari Certified Vegan Butter Infused Olive Oil 

DIRECTIONS

  • Preheat the oven to 400F. Line a large sheet pan with parchment paper or aluminum foil.
  • In a large bowl, toss together the vegetables, herbs, and olive oil. Give it a good mix, ensuring each piece gets coated. 
  • Spread the veggie mix evenly onto a sheet pan and pop into the oven. Roast for 45 minutes. At the 15-minute mark, flip over the veggies and continue roasting until golden. Once they are roasted, sprinkle with salt, pepper and an extra drizzle of olive oil. Set to the side to cool for 5 minutes. Keeping the oven on, turn down the temperature to 350F. 
  • Place the sliced bread on a sheet pan. Drizzle with olive oil and bake for 10 minutes for the perfect crostini. 
  • Now it is time to prepare the Tahini Dressing. There are two different ways to make this. You can either throw all the ingredients into a blender and blend until smooth or you can whip everything by hand.  
  • Serve the roasted vegetables either as individual meals with a lavish drizzle of tahini dressing or arrange them on a platter with the tahini dip and crostini to serve at a party.
