Ingredients
4 tbsp vegan butter
1/2 onion, finely diced
8 oz cremini mushrooms, thinly sliced
3 cloves garlic, minced
1 1/2 tsp fresh thyme
3 tbsp flour
2 cups vegetable broth
2 tsp tamari
a few dashes of vegan worcestershire sauce (optional)
salt & black pepper, to taste
Directions
Melt vegan butter over medium-high heat. Add onion and cook about 5 minutes or until they are translucent. Add mushrooms and cook until they start to release their juices. Add minced garlic and fresh thyme. Cook until the liquid evaporates and the mushrooms begin to brown. Add the flour and cook, stirring often, for 1 minute. Gradually add in the vegetable broth, while stirring constantly. Stir in the tamari and vegan worcestershire sauce (if using). Add salt and pepper to taste. Simmer for about 5-8 minutes. It will thicken as it sits and cools.
