Enjoy the savory goodness of Abbot’s Spicy Chopped Chick’n Fajitas Platter. Perfect for a cozy dinner for two, this recipe combines sautéed bell peppers with the flavor of Abbot’s Certified Vegan Chopped Chick’n. Served alongside a medley of refried beans, zesty salsa, and warm fresh flour tortillas, it’s a quick, easy, and undeniably delicious meal.

INGREDIENTS
- 1 red bell pepper, sliced into strips
- 1 yellow bell pepper, sliced into strips
- 1 orange bell pepper, sliced into strips
- 1 onion, sliced into strips
- 1 Package of Abbott’s Certified Vegan Chopped Chick’n
- 2 tsp garlic powder
- 1 tsp cumin powder
- 1 tsp onion powder
- 1 tbsp Sriracha
- 1 tsp nutritional yeast
- 2 tsp olive oil
- 1 can of vegan pinto beans with juice
- Pinch of salt
- Pinch of black pepper
- Pinch of red pepper flakes
- 1 lime, sliced
- 1 avocado, sliced
- One container of April’s favorite quick and easy salsa
DIRECTIONS
- Heat a teaspoon of olive oil in a pan over medium heat, then add the bell peppers and onions, sautéing until tender.
- In another pan, empty a can of pinto beans along with its juice, add 1 teaspoon of garlic powder, 1/2 teaspoon of cumin powder, 1 teaspoon of onion powder, and a pinch of salt. Simmer on medium-low heat for two minutes. Using a mashed potato masher, gently mash the beans. Mix everything together and let them cook on low for five minutes, stirring occasionally.
- Heat a teaspoon of olive oil in a non-stick pan over medium-high heat. Add the container of Abbot’s Chopped Chick’n, along with 1 teaspoon of garlic powder, 1/2 teaspoon of cumin powder, 1 tablespoon of Sriracha, 1 teaspoon of nutritional yeast, and a pinch of black pepper and crushed red pepper flakes. Sauté the mixture until thoroughly crisp and browned, approximately 6 to 8 minutes.
- Warm your flour tortillas in a pan over medium heat until they are pliable.
- Arrange the sautéed peppers, the Abbott’s chopped spicy Chick’n, refried beans, salsa, sliced avocado, tortillas, and lime slices on a large serving dish. Then, grab two plates and serve it up! Enjoy your tasty meal!
